Yields: 3 giant waffles, 5 normal ones
1 3/4 cup flour
1/2 teaspoon salt
2 teaspoons double-acting baking powder
1 tablespoon sugar
3 eggs, separated
2 to 7 tablespoons melted butter or vegetable oil
1 1/2 cup milk
1. Mix the flour, salt, baking powder, and sugar in a large bowl.
2. In a smaller bowl, beat the 3 egg yolks (save the whites!), and add the milk and melted butter or oil. Beat these together, and add to the dry ingredients. Combine with a few swift strokes, just until the batter looks "pebbly". (This is the place to add optional ingredients if you want.)
3. Beat the egg whites until stiff, but not dry. Fold them into the batter until just barely belnded.
4. Pout into a pre-heated waffle iron and cook.
You can add optional inredients such as dried fruit or raisins, chopped nuts, chocolate chips, etc.
My favorite way to eat waffles is with butter, fruit, whipped cream, and just a drizzle of maple syrup. Also very good is vanilla ice cream on your waffle drizzled with kahlua, amaretto, frangelico, or chambord.
